Teppan-grilled Orange Ginger Lobster Tails

It is lobster season here in South Florida and with some fresh local oranges on hand we just couldn't resist whipping up this dish for a delicious dinner. This recipe is pretty quick and easy, and with the Cook-N-Dine Teppanyaki cooktop it's a simple and fun set up that's great for a party of one, two or even a whole group! For this one we only prepared for two of us, but you could definitely make several tails if you're entertaining guests.Once you have washed and dried the lobster tails, it's time to prepare your orange ginger sauce. Start by melting a 1/4 cup of butter, then add in 2 teaspoons of lemon juice, 1-2 tablespoons of orange zest, 1 inch of fresh ginger, peeled and minced, 1/4 teaspoon of chili powder and 1/4 teaspoon of aromatic bitters. We use the original Angostura brand from Trinidad which has a delightful scent that reminds me of a good Old Fashioned.You can adjust the ginger and chili powder to taste. Simmer the ingredients in the melted butter for approximately 2 minutes, then remove from heat, stir and season with salt to taste. Preheat your Cook-N-Dine at level 5, then turn up to level 7 once preheated.  Some fresh leeks and avocado pair lovely with the lobster and add a nice touch of green to the meal.With clean kitchen scissors cut the top of the lobster tail shell down the center. Then take a sharp knife and cut through the flesh and underside. Prepare the flesh of the lobster tail with a little cooking spray, then place them flesh side down/shell side up to begin cooking.After 5 to 7 minutes, turn the tails over and spoon the orange ginger butter sauce on to the meat. The shell acts as a vessel for the sauce while cooking the tails. The smell of the citrus and ginger with the lobster is intoxicating and lovely.This is the perfect time to begin cooking the leeks or any other veggie you're preparing as a side dish for the tails, maybe even using some of the sauce as a little seasoning. Continue cooking the tails with the shell side down for about 5 minutes or until the meat is cooked through, no longer appearing translucent.[wpvideo OgfKHaSe]This is a dish that really allows for a lot of creativity, you can play with the seasoning that is added to your butter sauce and make it your own. If preparing many lobster tails for entertaining, you could even have a few varieties of butter sauces prepared so that guests can choose their own.Recipe as prepared for 2 servings
