Teppanyaki Fajitas
It's like a Mexican take on stir-fry! Fajitas are a fun way to use the Cook-N-Dine Teppanyaki. They're easy to prepare and the ingredients are interchangeable to satisfy all tastes and diets. Plus, they are such a crowd pleaser!We decided to make chicken fajitas this time around, but we have also made steak fajitas, veggie fajitas and you can even try it with shrimp, fish or scallops. Once we chose and prepped our ingredients for fillings and toppings, it was time to preheat the Cook-N-Dine Teppanyaki at level 5. Once preheated, we turned it up to 7 and got our sizzle on; starting with a little cooking oil with some onions and peppers, yum![wpvideo vBzfraBa]Once the edges of the onions and peppers started to get a little charred, we pushed them out to the outer warming area. We added a little more cooking oil, and then our chicken. If you are making veggie fajitas, you can cook up some mushrooms and spinach as your filling. We browned the chicken pieces, waiting until they released from the cooking surface. Before we flipped them over to brown the other side, we added half of the spice mix. Once the other side was browned, we turned off the heat and mixed the onions and peppers back in. In order to heat the tortillas, we placed them in the warming area while mixing the filling together on the hot cooking center. When done, we switched the heat off. Then we also added a couple of handfuls of spinach, for some extra greens and iron. Once the spinach wilted and the tortillas were warmed, the fun "build it how you like it" part commenced! It was time to dig in and enjoy.Ingredients, as prepared: (serves 3-4)
- 1.5 lbs boneless, skinless chicken thighs sliced against the grain in to 3/8" strips
- 2 medium fresh bell peppers, sliced in to thin strips
- 1 medium yellow or red onion, sliced in to thin strips
- 3 tbsp. neutral tasting cooking oil (we used our homemade ghee)
- 8 medium tortillas, flour or corn depending on personal preference
Home-made spice mix:
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp ground sweet paprika
- 1/4 tsp cayenne pepper
- 1/4 garlic powder
- 1 tsp salt
- 1 tsp fresh ground black pepper
